Player Pools are how Sprocket organizes players for tryouts, including attendance, evaluations, rankings, and tiers. Even if you do not want to split players into multiple groups, you still need one pool so the system knows where to place players.
What to do if you do not want multiple pools
Create one Player Pool that includes all of your tryout age groups.
This is the simplest setup and allows you to use Tryouts features without separating players into smaller groups.
